Crispy Gluten Free Waffles

Ingredients

  • 1 1/2 cups gluten free oat flour
  • 1/2 cup blanched almond flour
  • 1/4 cup chickpea flour
  • 1/2 cup cornmeal
  • 1 tablespoon ground chia or flax seeds
  • 1 tablespoon baking powder
  • pinch sea salt
  • make a well in the center of the dry ingredients, and add:
  • 2 1/2 cups non dairy milk
  • 2 teaspoons vanilla extract
  • 3 tablespoons date paste, maple syrup, or coconut sugar
  • 2 1/2 cups non dairy milk

Preparation

  1. Make a well in the center of the dry ingredient

  2. Mix until well combined. Following your waffle maker's direction, using about 1/2 cup batter per waffle. Cook until crispy and delicious

  3. Note: Don’t taste the batter! If you taste the batter you may be thrown off by the flavor of the chickpea flour, but I promise it goes away as it cooks
