Double Chocolate Muffins Made Using Buttery Avocado

Ingredients

  • 1/2 cup whole meal flour
  • 3/4 cup all Purpose Flour
  • 1/2 cup cocoa powder
  • 1/2 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup coconut sugar
  • 1/4 tsp salt
  • 1 large ripe avocado
  • 3/4 cup unsweetened oat milk
  • 1/4 cup dairy free yogurt
  • 1 tsp vanilla bean extract
  • 1/2 cup dark chocolate chips

Preparation

  1. In a large bowl combine flour, cocoa powder, baking powder, baking soda, coconut sugar and salt. Set a side

  2. In a blender, add avocado, yogurt, milk, vanilla and blend until smooth

  3. Pour avocado-milk mixture to dry ingredients and use a fork to combine. Fold in chocolate chips

  4. Scoop muffin batter into prepared muffin tins Divide batter evenly between 8-9 cupcake liners. Bake at preheated oven at 180c for 20 mins or toothpick comes out clean
