Double Chocolate Muffins Made Using Buttery Avocado
Ingredients
- 1/2 cup whole meal flour
- 3/4 cup all Purpose Flour
- 1/2 cup cocoa powder
- 1/2 tbsp baking powder
- 1/2 tsp baking soda
- 1/2 cup coconut sugar
- 1/4 tsp salt
- 1 large ripe avocado
- 3/4 cup unsweetened oat milk
- 1/4 cup dairy free yogurt
- 1 tsp vanilla bean extract
- 1/2 cup dark chocolate chips

In a large bowl combine flour, cocoa powder, baking powder, baking soda, coconut sugar and salt. Set a side
In a blender, add avocado, yogurt, milk, vanilla and blend until smooth
Pour avocado-milk mixture to dry ingredients and use a fork to combine. Fold in chocolate chips
Scoop muffin batter into prepared muffin tins Divide batter evenly between 8-9 cupcake liners. Bake at preheated oven at 180c for 20 mins or toothpick comes out clean
