Fluffy Sweet Potato Coconut Custard Bites
Ingredients
Base
- 1/2 cup of oats
- Nuts of your liking
- Dried fruit (e.g., raisins)
- 3 tbsp coconut oil
Layer
- 1/3 can of Nature's Charm coconut custard
- Coconut sugar
Sweet Potato Layer
- 1 big sweet potato, cooked and mashed
- 150 ml coconut cream
- 1 tbsp starch
- 1 tbsp psyllium husk
- 2/3 can of Nature's Charm coconut custard
- 2 tbsp lemon juice
- 1 tbsp stevia (adjust to taste)
Preparation
Base
Combine oats, nuts, dried fruit, and coconut oil in a food processor.
Blitz until the mixture forms a sticky dough.
Press the dough firmly into a form and refrigerate.
Layer
Spread 1/3 can of Nature's Charm coconut custard on top of the base.
Sprinkle coconut sugar over the custard and place back in the fridge.
Sweet Potato Layer
Mash the cooked sweet potato until creamy.
Whip up the coconut cream, then add starch, psyllium husk, and 2/3 can of coconut custard.
Mix in the sweet potato puree, lemon juice, and stevia.
Spread the sweet potato mixture on top of the base and refrigerate for 2 hours before serving.
