Healthy Vegan Black Bean Brownies
Ingredients
- 2 tbsp flaxseed meal
- 6 tbsp water
- sugar
- black beans
- nut butter
- cacao powder
- espresso
- vanilla
- baking powder
- sea salt
- 1/4 cup chocolate chips
- nuts (optional)
Preparation
Make flax eggs by combining 2 tbsp flaxseed meal with 6 tbsp water. Let thicken for 15 min.
Preheat oven to 350° and line 9 inch brownie pan with parchment paper.
Process sugar in food processor until it becomes fine. Add in black beans and nut butter and process til smooth.
Add in flax eggs, cacao powder, espresso, vanilla, baking powder, sea salt, and process til smooth.
Add 1/4 cup of the chocolate chips and mix them by hand. Pour batter into baking dish and smooth the top. Top with remaining chocolate chips and nuts if desired.
Bake for 25-30 min.
