Lemon Curd Mousse Lemon Cake Dessert
Ingredients
- Flour
- Sugar
- Lemon Zest and Juice
- Vanilla Sugar
- Margarine
- Oat Cream
- 200ml Soya Cream
- Heaped tbsp Lemon Curd
- 100g Vegan Cream Cheese
- Powdered Sugar
- Strawberries
- Vanilla Ice Cream
- Optional: Brownie Crumbles or Nuts
Preparation
Preheat the oven and prepare a cake pan.
In a mixing bowl, combine flour, sugar, lemon zest, vanilla sugar, melted margarine, and oat cream. Mix until smooth.
Pour the batter into the prepared cake pan and bake according to instructions.
While the cake is baking, prepare the lemon curd mousse. Whip the soya cream until fluffy.
Gently fold in the lemon curd, vegan cream cheese, and powdered sugar into the whipped cream.
Place the lemon curd mousse mixture in the fridge to chill.
Once the cake is cooled, cut it into smaller pieces or crumbles.
In serving bowls, layer the lemon cake pieces, lemon curd mousse, strawberries, and vanilla ice cream.
If desired, add some brownie crumbles or nuts for extra crunch and flavor.
Serve and enjoy!
