Macadamia Chocolate Chip Truffles

Ingredients

  • 250g macadamia nuts or macadamia nut butter
  • 100g melted cacao butter
  • 1 tsp vanilla extract or powder
  • 1-2 tbs pure maple syrup
  • 100g chopped vegan chocolate

Preparation

  1. Blend the macadamia nuts in a food processor to a paste if not using nut butter.

  2. Add melted cacao butter and blend until smooth.

  3. Add all remaining ingredients except chocolate and blend.

  4. Stir through the chocolate, then pour into molds or a baking paper-lined tray.

  5. Allow to set in the fridge for an hour, then serve.

Notes

  1. This recipe tastes like white chocolate cookie dough and other nuts can be substituted.

  2. Macadamia nuts are rich in healthy fats, fiber, and nutrients, and are a low FODMAP alternative to cashews.
