Post Yoga Banana Bread

Ingredients

  • 180g spelt flour
  • 1 tsp bicarb
  • 1 tsp cinnamon
  • 150g xylitol (or coconut sugar if you don't have blood sugar issues)
  • 1 egg
  • 80g melted coconut (or butter)
  • 4 pureed or mashed bananas (plus 1 for decoration)

Preparation

  1. Preheat oven to 180c

  2. Line a loaf tin with butter

  3. Puree banana and mix with the oil and egg

  4. Mix all the dry ingredients together with the lime zest

  5. Then mix it all together

  6. Pour into the tin and top with the final banana cut lengthways

  7. Bake for 30 mins, cool and serve

  8. If we don't eat it all on the same day, it's great chargrilled and served with Greek yoghurt a few days later
