Simple Banana Protein Muffins with Nuts
Ingredients
- 3 bananas
- 1 cup chickpea flour
- 2 scoops protein powder
- 2 tsp baking soda
- crushed hazelnuts and macadamia nuts
- plant milk
- 2 dates
- rice syrup
- dark chocolate chips
Preparation
Blend bananas, milk, dates and syrup in a blender until smooth.
Add flour, baking soda and protein powder to a bowl.
Combine the blender mixture with the flour mixture; aim for a consistency slightly thicker than pancake batter.
Fold in nuts and chocolate chips.
Spoon the mixture into a muffin tray and bake at 200 degrees for about 20 minutes; use a knife test to check doneness.
Optionally, serve with almond butter.
