Simple Banana Protein Muffins with Nuts

Ingredients

  • 3 bananas
  • 1 cup chickpea flour
  • 2 scoops protein powder
  • 2 tsp baking soda
  • crushed hazelnuts and macadamia nuts
  • plant milk
  • 2 dates
  • rice syrup
  • dark chocolate chips

Preparation

  1. Blend bananas, milk, dates and syrup in a blender until smooth.

  2. Add flour, baking soda and protein powder to a bowl.

  3. Combine the blender mixture with the flour mixture; aim for a consistency slightly thicker than pancake batter.

  4. Fold in nuts and chocolate chips.

  5. Spoon the mixture into a muffin tray and bake at 200 degrees for about 20 minutes; use a knife test to check doneness.

  6. Optionally, serve with almond butter.
