Simple Roasted Apricots with Almonds and Maple Syrup

Ingredients

  • 7 apricots
  • 2 oranges
  • 1/2 lime (juice and zests)
  • 30g hand cut almonds
  • 1/8 tsp vanilla powder
  • 1-2 tbsp maple syrup
  • optional: 1/8 tsp cinnamon
  • optional: 1/4 tsp vanilla extract
  • optional: a few drops of orange blossom water

Preparation

  1. This dessert is easy and can be served with plain yogurt or ice cream; optionally, add a few drops of orange blossom water when serving for extra flavor.

  2. Preheat your oven to 180C.

  3. In a baking dish, add the halved apricots, orange juice, lime juice, hand cut almonds, and vanilla powder (plus extract and cinnamon if desired).

  4. Roast for 8-10 minutes.

  5. Remove from the oven and delicately transfer the cooked apricots onto a plate.

  6. With the remaining sauce, add the maple syrup and orange blossom water if desired.

  7. Serve cold or warm, with yogurt or ice cream. Drizzle the sauce and sprinkle the lime zests on top.
