Chickpea Cookie Dough Loaded Overnight Oats

Ingredients

  • 1/3 cup oats, blended to a flour
  • 1/3 cup oats
  • vanilla powder/essence
  • 100ml almond milk
  • 1 medjool date, chopped
  • mix + leave overnight
  • 1-2 tbsp vanilla cashew butter
  • cinnamon
  • vanilla powder/essence
  • 1-2 tbsp maple syrup
  • some vegan chocolate chips

Preparation

  1. Blend all ingredients apart from the choc chips in a food processor, then stir in the choc chips

  2. Divide into two bowls/cups, add some almond milk into one and stir it to form a dip like consistency

  3. Place both in the fridge overnight

  4. IN THE MORNING?

  5. Give your oats a stir, they will probably need a splash more of milk to reach your desired consistency (thick but just pourable)

  6. With the cookie dough that you added milk to, see if it needs a splash more milk and give it a stir

  7. With the other cookie dough, roll it into balls

  8. Layer up your cup/jar with the oats, some sliced banana and your cookie dough dip (repeat)

  9. Top with the cookie dough balls and drizzle on some vegan choc sauce
