THe Best Vegan Strawberry Scones

Ingredients

  • 1.5 cups whole wheat flour
  • 3 tbsp coconut sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 4 tbsp coconut oil (melted)
  • 2 tbsp almond milk
  • 1 cup chopped fresh strawberries

Preparation

  1. Preheat oven to 400°F

  2. Combine dry ingredients in one bowl, then in another bowl mix together the wet (yogurt, oil & milk)

  3. Add wet to the dry & mix until just combined (Soph makes it clear to NOT overmix— the dough will be crumbly! I used a fork to “cream” together the mixture until an even dough)

  4. Fold in the strawberry pieces

  5. On a lined baking tray, form the dough into a circle by hand, flatten a bit to form a thick disk (about 6in in diameter) & cut into 6 large pieces

  6. Bake for 20min until edges are golden
