THe Best Vegan Strawberry Scones
Ingredients
- 1.5 cups whole wheat flour
- 3 tbsp coconut sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 4 tbsp coconut oil (melted)
- 2 tbsp almond milk
- 1 cup chopped fresh strawberries
Preparation
Preheat oven to 400°F
Combine dry ingredients in one bowl, then in another bowl mix together the wet (yogurt, oil & milk)
Add wet to the dry & mix until just combined (Soph makes it clear to NOT overmix— the dough will be crumbly! I used a fork to “cream” together the mixture until an even dough)
Fold in the strawberry pieces
On a lined baking tray, form the dough into a circle by hand, flatten a bit to form a thick disk (about 6in in diameter) & cut into 6 large pieces
Bake for 20min until edges are golden
