Vegan Blueberry Lollies

Ingredients

  • 1 cup of coconut yogurt (unsweetened)
  • 3 tbsp maple syrup
  • 2 cups of lightly stewed wild blueberries, sieve the liquid, set aside
  • Purple and blue spirulina powder (optional)
  • A pinch of salt
  • 1/2 tsp of vanilla powder

Preparation

  1. Combine coconut yogurt, maple syrup, spirulina powder (if using), salt, and vanilla powder in a mixing bowl.

  2. Gently stir until the ingredients are well combined.

  3. Lightly stew the wild blueberries and then sieve the liquid from them. Set aside the sieved blueberry liquid for other uses.

  4. Fill lolly molds with the yogurt mixture, leaving a little space at the top.

  5. Place the molds in the freezer for about an hour.

  6. After an hour, insert wooden sticks into the center of each lolly.

  7. Return the molds to the freezer and let them freeze overnight, or until the lollies are completely frozen.

  8. Once frozen, remove the lollies from the molds and enjoy your vegan blueberry lollies!
