Vegan Chocolate Chip Cookies

Ingredients

  • 1 scoop @proteinworld vanilla vegan protein
  • 1 cup @quakeroatsuk
  • 2 tbsp @vitacocoeu coconut oil
  • 1/4 cup coconut sugar
  • 1/2 cup @alpro almond milk
  • 1/4 cup buckwheat flour
  • 1 tsp baking powder
  • 1 tbsp flaxseed
  • 1/2 cup chocolate chips
  • 1 dash of lemon juice, cinnamon and nutmeg
  • 1 tsp vanilla extract and salted caramel flavouring

Preparation

  1. Blend the oats in a blender to make it a flour, add the rest of the dry ingredients to the flour in a mixing bowl

  2. In a separate bowl mix the wet ingredients (making sure the oil is melted

  3. Let the flaxseed sit in the wet ingredients mixture for 5 mins and then transfer the wet into the dry and start mixing

  4. It should be a thick dough texture

  5. Add extra almond milk if needed

  6. Shape into cookie to the size you’d like and put in the oven for 12 mins at 200 degrees
