Vegan Chocolate Chip Cookies
Ingredients
- 1 scoop @proteinworld vanilla vegan protein
- 1 cup @quakeroatsuk
- 2 tbsp @vitacocoeu coconut oil
- 1/4 cup coconut sugar
- 1/2 cup @alpro almond milk
- 1/4 cup buckwheat flour
- 1 tsp baking powder
- 1 tbsp flaxseed
- 1/2 cup chocolate chips
- 1 dash of lemon juice, cinnamon and nutmeg
- 1 tsp vanilla extract and salted caramel flavouring
Preparation
Blend the oats in a blender to make it a flour, add the rest of the dry ingredients to the flour in a mixing bowl
In a separate bowl mix the wet ingredients (making sure the oil is melted
Let the flaxseed sit in the wet ingredients mixture for 5 mins and then transfer the wet into the dry and start mixing
It should be a thick dough texture
Add extra almond milk if needed
Shape into cookie to the size you’d like and put in the oven for 12 mins at 200 degrees
