Vegan Gluten-Free London Fog Cookies
Ingredients
- 1 cup vegan butter
- 2 1/3 cup GF flour
- 1 cup icing sugar
- Salt
- 1/2 tsp vanilla
- 1/4 teaspoon Xanthan gum
- 1 pouch of earl grey tea
- 1 cup vegan white chocolate chips
- 1 tbsp coconut oil
Preparation
Cream butter in an electric or stand mixer and add vanilla, combining quickly.
Add flour, icing sugar, xanthan gum, tea bag, and salt, then mix together while scraping down the sides as needed.
The dough should be crumbly but can be formed into a ball with hands; if too wet, add more flour one tablespoon at a time.
Roll the dough on a flat surface between two pieces of parchment paper.
Roll into a flat sheet and use cookie cutters to shape the cookies.
Place on a cookie sheet and bake at 350 degrees for 6-10 minutes, depending on cookie size, until edges turn golden.
Remove from oven and allow to cool for 30 minutes.
Melt the white chocolate chips with the coconut oil.
Dip the cooled cookies in the melted white chocolate and let cool until the chocolate sets.
Tips
Sprinkle with dried lavender if desired.
