Vegan Lentil Chocolate Cake
Ingredients
- 2 cups red lentil flour
- 2 cups buckwheat flour
- 1/2 cup date syrup or any sweetener of choice
- 1/2 cup plant milk
- 1/3 cup cocoa powder
- 2 big mashed bananas or 3 small
- 2 tsp baking powder
- 1 tsp lemon juice
Chocolate cream
- 1 can coconut milk, chilled
- 1 bar (70g) chocolate
- 1/3 cup date syrup, optional to add more
- 4 tbsp cocoa powder
- 1/3 cup plant milk
Preparation
Cake
Mix all the ingredients together.
Divide the batter into two baking pans.
Bake at 360F for about 30 minutes.
Chill the cakes until cool.
Chocolate cream
Whip your coconut milk.
Melt the chocolate and mix it with plant milk so it’s more runny.
Then add the rest of the ingredients to your whipped coconut milk and mix it carefully.
Let it sit in the fridge for a few hours.
Assembly
Spread some of the chocolate cream onto one of the chilled sponges.
Then place the other sponge on top.
Cover it with the rest of the chocolate cream.
