Vegan Lentil Chocolate Cake

Ingredients

  • 2 cups red lentil flour
  • 2 cups buckwheat flour
  • 1/2 cup date syrup (or any sweetener of choice)
  • 1/2 cup plant milk
  • 1/3 cup cocoa powder
  • 2 big mashed bananas (or 3 small)
  • 2 tsp baking powder

Preparation

  1. Mix all the ingredients together. Divide the batter into two baking pans and bake at 360F for about 30 minutes

  2. For the chocolate cream: 1 can coconut milk (chilled in the fridge), 1 bar (70g) chocolate, 1/3 cup date syrup (add some more if you prefer), 4 tbsp cocoa powder, 1/3 cup plant milk.

  3. Whip your coconut milk. Melt the chocolate and mix it with plant milk so it’s more runny. Then add the rest of the ingredients to your whipped coconut milk and mix it carefully. Let it sit in the fridge for a few hours

  4. Spread some of the chocolate cream onto one of the chilled sponges, then place the other sponge on top. Cover it with the rest of the chocolate cream and enjoy
