Vegan Tahini & Chia Chocolate Chip Cookies
Ingredients
- * 1/2 cup tahini
- 1/3 cup coconut sugar/brown sugar
- * 1/2 tbs blackstrap molasses
- * 1/3 cup coconut oil
- * 1/2 tsp vanilla
- * 1.5 tbs chia seeds
- 1/4 cup nut milk left to gel for minimum 5 min
- * 2 cups whole wheat pastry flour
- * 1/2 tsp baking soda
- * pinch salt
- * 1/2 cup chocolate chips
Preparation
Whisk all wet ingredients + sugar until thick and glossy
Sift in dry ingredients and fold to incorporate; halfway, add the chocolate chips and fold till flour is just combined evenly
Scoop out 2 tbsp portions of dough on a lined cookie sheet and flatten slightly
Bake at 170 degrees Celsius for 15 minutes, or until golden brown. let cool on a wire rack and enjoy
