Vegan Tahini & Chia Chocolate Chip Cookies

Ingredients

  • * 1/2 cup tahini
  • 1/3 cup coconut sugar/brown sugar
  • * 1/2 tbs blackstrap molasses
  • * 1/3 cup coconut oil
  • * 1/2 tsp vanilla
  • * 1.5 tbs chia seeds
  • 1/4 cup nut milk left to gel for minimum 5 min
  • * 2 cups whole wheat pastry flour
  • * 1/2 tsp baking soda
  • * pinch salt
  • * 1/2 cup chocolate chips

Preparation

  1. Whisk all wet ingredients + sugar until thick and glossy

  2. Sift in dry ingredients and fold to incorporate; halfway, add the chocolate chips and fold till flour is just combined evenly

  3. Scoop out 2 tbsp portions of dough on a lined cookie sheet and flatten slightly

  4. Bake at 170 degrees Celsius for 15 minutes, or until golden brown. let cool on a wire rack and enjoy
