Zucchini Chocolate Brownie
Ingredients
- 100g cooking chocolate
- 100g butter
- 500g zucchini
- 2 eggs
- 180g powdered sugar
- 150g white yogurt
- 280g all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon phosphate-free baking powder
- 50g cocoa powder
- pinch of salt
- 60g chopped cooking chocolate
- 2 handfuls dried cranberries (optional)
Preparation
Melt 100g cooking chocolate with 100g butter and let it cool.
Grate 500g zucchini finely.
In a food processor, add 2 eggs with 180g powdered sugar and beat.
Then add 150g white yogurt, 280g all-purpose flour, 2 teaspoons baking soda, 1 teaspoon phosphate-free baking powder, 50g cocoa powder, a pinch of salt, and the cooled chocolate mixture.
Next, add the grated zucchini without juice, 60g chopped cooking chocolate, and 2 handfuls of dried cranberries if desired.
Bake at 180°C for 30 minutes.
