Adapted Minestrone Soup

Ingredients

  • 1 onion
  • 1 garlic clove (optional)
  • 2 carrots
  • 1 potato
  • Frozen peas
  • 1 tin baked beans
  • 1/2 tin of spaghetti
  • 1 tin chopped tomatoes
  • 1 tsp mixed herbs
  • 1 veg stock cube
  • 250-300ml boiling water
  • 1 big tbsp of balsamic vinegar
  • Black pepper

Preparation

  1. Chop the onion and garlic (if using) finely.

  2. Peel and dice the carrots and potato.

  3. In a large pot, heat some oil and sauté the chopped onion and garlic until fragrant.

  4. Add the diced carrots and potato, along with frozen peas.

  5. Pour in the tin of baked beans and half tin of spaghetti. Stir well.

  6. Add the tin of chopped tomatoes and mixed herbs to the pot. Mix everything together.

  7. Dissolve the veg stock cube in the boiling water and pour it into the pot.

  8. Add the balsamic vinegar and a generous amount of black pepper. Stir to combine.

  9. Let the soup simmer on medium-low heat until the potatoes are cooked through.

  10. Taste and adjust seasoning if needed.

  11. Serve the adapted minestrone soup hot.
