Apricot Strawberry Blueberry Crumble

Ingredients

  • 3 apricots diced (approximately 2 cups)
  • Strawberries sliced (approximately 2 cups)
  • 3/4 cup blueberries
  • 1/2 lemon juiced

Topping

  • 1 cup gf oats
  • 1/2 cup gf flour
  • 1/2 cup coconut sugar
  • 1 tsp cinnamon
  • 1/2 cup sliced almonds
  • 1/2 tsp salt
  • 1/2 cup melted butter vegan or dairy

Preparation

  1. Preheat oven to 355 degrees.

  2. Measure fruit in a large glass measuring cup to ensure just over 4 cups total.

  3. Scatter fruit in the bottom of an approximately 8x8 baking dish and pour lemon juice on top.

  4. In a separate bowl, mix together the topping ingredients until the mixture holds together when pinched.

  5. Scatter the topping over the fruit and place in the oven.

  6. Bake for 40-45 minutes until the topping is browned.

  7. Let it cool for 10 minutes before serving.
