Asian Lentil Fritters
Ingredients
- red lentils: 2 c cooked
- shallots: 2
- garlic: 2
- ginger: 1 cm
- kaffir leaves: 3
- coriander leaves and stems: handful
- soya sauce: 3 t
- red chilli paste: 2- 3 t
- sesame seeds: 1 t
- salt: 1 t
- cornflour: upto 1/2 c
Preparation
Add all ingredients, except cornflour to a food processor and blend into a paste
Transfer contents into a bowl and add cornflour 1 t at a time till mixture thickens
It should be a sticky mixture that you can scoop up with a spoon but cannot shape with your hands
It should be thicker than a pancake batter
Heat oil in a skillet and add 1 heaped t of mixture into the oil
Cook on a low heat for 3-4 minutes then flip and cook the other side
