Asian Lentil Fritters

Ingredients

  • red lentils: 2 c cooked
  • shallots: 2
  • garlic: 2
  • ginger: 1 cm
  • kaffir leaves: 3
  • coriander leaves and stems: handful
  • soya sauce: 3 t
  • red chilli paste: 2- 3 t
  • sesame seeds: 1 t
  • salt: 1 t
  • cornflour: upto 1/2 c

Preparation

  1. Add all ingredients, except cornflour to a food processor and blend into a paste

  2. Transfer contents into a bowl and add cornflour 1 t at a time till mixture thickens

  3. It should be a sticky mixture that you can scoop up with a spoon but cannot shape with your hands

  4. It should be thicker than a pancake batter

  5. Heat oil in a skillet and add 1 heaped t of mixture into the oil

  6. Cook on a low heat for 3-4 minutes then flip and cook the other side
