Sweet Potato Red Lentil Fritters

Ingredients

Sweet potato red lentil fritters

  • 1 package riced sweet potato or 1 small sweet potato
  • 1/3 cup red lentils
  • 1/3 red onion
  • 1 red bell pepper
  • Handful of spinach
  • 1/2 cup sweet corn
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cayenne (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon dried oregano
  • 2 tablespoons ground flax seed
  • 1/3 cup gluten-free flour

Citrus herb yogurt sauce

  • 1/2 cup vegan Greek yogurt
  • 1 lime
  • 1/2 teaspoon onion powder
  • 1 teaspoon dried parsley

Preparation

  1. Prepare the sweet potato and lentils as directed.

  2. Heat a large cast iron skillet over medium heat and melt 1 teaspoon coconut oil. Sauté onion and red pepper until fragrant and tender.

  3. Add in spinach and sauté until wilted.

  4. Add sweet potato, lentils, sautéed veggies, and corn to a large bowl and combine. Stir in seasonings, flax seed, and flour.

  5. If the mixture is too dry, add a tablespoon or two of plant-based milk. If it is too wet, add a tablespoon of flour.

  6. Form into patties and pan sear in coconut oil over medium heat for 3 minutes per side or until golden brown.

  7. Combine all ingredients for the sauce.

  8. Serve hot topped with the sauce alongside a fresh green salad.
