Sweet Potato Red Lentil Fritters
Ingredients
Sweet potato red lentil fritters
- 1 package riced sweet potato or 1 small sweet potato
- 1/3 cup red lentils
- 1/3 red onion
- 1 red bell pepper
- Handful of spinach
- 1/2 cup sweet corn
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon cayenne (optional)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon dried parsley
- 1/2 teaspoon dried oregano
- 2 tablespoons ground flax seed
- 1/3 cup gluten-free flour
Citrus herb yogurt sauce
- 1/2 cup vegan Greek yogurt
- 1 lime
- 1/2 teaspoon onion powder
- 1 teaspoon dried parsley
Preparation
Prepare the sweet potato and lentils as directed.
Heat a large cast iron skillet over medium heat and melt 1 teaspoon coconut oil. Sauté onion and red pepper until fragrant and tender.
Add in spinach and sauté until wilted.
Add sweet potato, lentils, sautéed veggies, and corn to a large bowl and combine. Stir in seasonings, flax seed, and flour.
If the mixture is too dry, add a tablespoon or two of plant-based milk. If it is too wet, add a tablespoon of flour.
Form into patties and pan sear in coconut oil over medium heat for 3 minutes per side or until golden brown.
Combine all ingredients for the sauce.
Serve hot topped with the sauce alongside a fresh green salad.
