BBQ Jackfruit and Mushrooms

Ingredients

  • 4 garlic cloves, finely chopped
  • 400g tin jackfruit (rinsed and drained)
  • 250g shiitake mushrooms, halved and sliced
  • 1/2 cup tomato paste
  • 1 tablespoon tamari
  • 2 teaspoons rice malt syrup
  • 1/2 to 1 teaspoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper

Preparation

  1. Shred the jackfruit. In a large frying pan, fry the garlic, mushrooms and jackfruit until brown and wilted.

  2. While that's cooking, whisk the remaining ingredients together, adding about 1/2 cup of water to thin it out.

  3. Turn the heat right down on the frypan and pour the sauce in. Give it a quick stir before removing from the heat. The sauce will thicken quickly. Combine it all well, and serve.
