BBQ Jackfruit and Mushrooms
Ingredients
- 4 garlic cloves, finely chopped
- 400g tin jackfruit (rinsed and drained)
- 250g shiitake mushrooms, halved and sliced
- 1/2 cup tomato paste
- 1 tablespoon tamari
- 2 teaspoons rice malt syrup
- 1/2 to 1 teaspoon apple cider vinegar
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper
Preparation
Shred the jackfruit. In a large frying pan, fry the garlic, mushrooms and jackfruit until brown and wilted.
While that's cooking, whisk the remaining ingredients together, adding about 1/2 cup of water to thin it out.
Turn the heat right down on the frypan and pour the sauce in. Give it a quick stir before removing from the heat. The sauce will thicken quickly. Combine it all well, and serve.
