Bbq Jackfruit + Mushrooms

Ingredients

  • 250g shittake mushrooms, halved + sliced
  • 1/2 cup tomato paste
  • 1 tblsp tamari
  • 2 tsp rice malt syrup
  • 1/2 - 1 tsp apple coder vinegar
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • salt + pepper
  • 4 garlic cloves, finely chopped
  • 400g tin jackfruit (rinsed + drained)

Preparation

  1. Shred the jackfruit. In a large frying pan, fry off the garlic, mushrooms + jackfruit until brown + wilted

  2. While that's cooking, whisk the remaining ingredients together, adding about 1/2 cup of water to thin it out

  3. Turn the heat right down on the frypan and pour the sauce in. Give it a quick stir before removing from the heat. The sauce will thicken quickly. Combine it all well, and serve
