Beetroot & Apple Pancakes

Ingredients

  • 1 grated apple (skin on)
  • 1 banana
  • 1 cooked beetroot (not with vinegar)
  • 1 cup of plant milk
  • 1.5 cups wholemeal flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon & ginger

Preparation

  1. In a blender, combine the plant milk, banana, and cooked beetroot. Blend until smooth.

  2. In a separate bowl, mix together the wholemeal flour, baking powder, cinnamon, and ginger.

  3. Pour the blended liquid into the dry mixture and add the grated apple. Mix thoroughly and let the batter rest for 5 minutes.

  4. Heat a non-stick pan with a small amount of oil. Pour ladlefuls of batter onto the pan to form pancakes.

  5. Cook each pancake for 3-4 minutes on one side until bubbles form on the surface. Flip and cook for an additional 3-4 minutes on the other side.

  6. Serve the pancakes with dairy-free yogurt and fresh fruit.
