Chicken Street Corn Tacos

Ingredients

Crockpot chicken

  • 1.5 lbs chicken breast
  • juice of 1 lime
  • 2 tbsp oil
  • 3 cloves garlic
  • 1 tsp cumin
  • 1 tsp chipotle chili pepper
  • 1 tsp paprika
  • 1/2 tsp salt

Street corn mix

  • 2 cups fire roasted frozen corn
  • 1 clove garlic
  • 1/2 tsp chipotle chili powder
  • 1/2 cup greek yogurt
  • juice and zest of 1/2 lime
  • 1/4 cup green onions
  • 1/3 cup cilantro

Assembly

  • tortillas
  • avocado
  • cotija cheese

Preparation

  1. Cook the crockpot chicken on low for 3-4 hours, then shred it in the crockpot.

  2. Sauté the street corn mix by cooking 2 cups of fire roasted frozen corn with 1 clove of garlic and 1/2 teaspoon of chipotle chili powder.

  3. In a bowl, mix the sautéed corn with 1/2 cup of Greek yogurt, juice and zest of 1/2 lime, 1/4 cup of green onions, and 1/3 cup of cilantro, adding more chili powder if desired.

  4. Serve the shredded chicken and street corn mixture on tortillas with avocado and cotija cheese.
