Chicken Street Corn Tacos
Ingredients
Crockpot chicken
- 1.5 lbs chicken breast
- juice of 1 lime
- 2 tbsp oil
- 3 cloves garlic
- 1 tsp cumin
- 1 tsp chipotle chili pepper
- 1 tsp paprika
- 1/2 tsp salt
Street corn mix
- 2 cups fire roasted frozen corn
- 1 clove garlic
- 1/2 tsp chipotle chili powder
- 1/2 cup greek yogurt
- juice and zest of 1/2 lime
- 1/4 cup green onions
- 1/3 cup cilantro
Assembly
- tortillas
- avocado
- cotija cheese
Preparation
Cook the crockpot chicken on low for 3-4 hours, then shred it in the crockpot.
Sauté the street corn mix by cooking 2 cups of fire roasted frozen corn with 1 clove of garlic and 1/2 teaspoon of chipotle chili powder.
In a bowl, mix the sautéed corn with 1/2 cup of Greek yogurt, juice and zest of 1/2 lime, 1/4 cup of green onions, and 1/3 cup of cilantro, adding more chili powder if desired.
Serve the shredded chicken and street corn mixture on tortillas with avocado and cotija cheese.
