Ingredients
- 430g AP flour
- 15g super dark Dutch process cocoa
- 15g organic fair trade Cacao powder
- 340g water
- 9g sea salt
- 92g 100% hydration starter
- fresh cherries
Preparation
Bulk ferment for 4 hours with 5 folds
Add fresh cherries before final shaping
Proof at room temperature for 1 hour
Then proof in the fridge
