Ingredients

  • 430g AP flour
  • 15g super dark Dutch process cocoa
  • 15g organic fair trade Cacao powder
  • 340g water
  • 9g sea salt
  • 92g 100% hydration starter
  • fresh cherries

Preparation

  1. Bulk ferment for 4 hours with 5 folds

  2. Add fresh cherries before final shaping

  3. Proof at room temperature for 1 hour

  4. Then proof in the fridge
