- 15g super dark dutch process cocoa
- 15g organic fair trade cacao powder
- 340g water
- 9 g sea salt
- 92 g 100% hydration starter
Preparation
4 hrs bulk fermentation (5 folds), added cherries before final shaping. 1 hr room temp proof and the rest in the fridge
