Creamy Asian-Style Chickpeas and Broccoli

Ingredients

  • 1/3 cup almond or peanut butter
  • 1 tbsp coconut aminos or low-sodium tamari or soy sauce
  • 2 tbsp fresh lime juice
  • 2 tsp toasted sesame oil
  • 3/4 tsp sambal oelek or sriracha
  • 1/2 tsp mirin
  • 1/2 tsp maple syrup
  • 1 minced garlic clove
  • 2 tsp grated ginger
  • 2 tbsp water
  • 1-15 oz can washed garbanzos
  • approximately 1 cup lightly steamed or roasted broccoli florets

Preparation

  1. Mix together 1/3 cup almond or peanut butter, 1 tbsp coconut aminos or low-sodium tamari or soy sauce, 2 tbsp fresh lime juice, 2 tsp toasted sesame oil, 3/4 tsp sambal oelek or sriracha, 1/2 tsp mirin, 1/2 tsp maple syrup, 1 minced garlic clove, and 2 tsp grated ginger.

  2. Add 2 tbsp water and mix well.

  3. Add more water as needed to achieve the desired consistency.

  4. Stir in one 15 oz can of washed garbanzos and approximately 1 cup of lightly steamed or roasted broccoli florets.
