Creamy Asian-Style Chickpeas and Broccoli
Ingredients
- 1/3 cup almond or peanut butter
- 1 tbsp coconut aminos or low-sodium tamari or soy sauce
- 2 tbsp fresh lime juice
- 2 tsp toasted sesame oil
- 3/4 tsp sambal oelek or sriracha
- 1/2 tsp mirin
- 1/2 tsp maple syrup
- 1 minced garlic clove
- 2 tsp grated ginger
- 2 tbsp water
- 1-15 oz can washed garbanzos
- approximately 1 cup lightly steamed or roasted broccoli florets
Preparation
Mix together 1/3 cup almond or peanut butter, 1 tbsp coconut aminos or low-sodium tamari or soy sauce, 2 tbsp fresh lime juice, 2 tsp toasted sesame oil, 3/4 tsp sambal oelek or sriracha, 1/2 tsp mirin, 1/2 tsp maple syrup, 1 minced garlic clove, and 2 tsp grated ginger.
Add 2 tbsp water and mix well.
Add more water as needed to achieve the desired consistency.
Stir in one 15 oz can of washed garbanzos and approximately 1 cup of lightly steamed or roasted broccoli florets.
