Creamy Coconut Turmeric Rice

Ingredients

  • 1 tsp coconut oil
  • 1/4 red onion, thinly sliced
  • 2 tsp minced garlic
  • 1 tsp curry powder
  • 2 pkgs turmeric brown rice
  • one 15-oz. can full-fat coconut milk

Preparation

  1. Sauté onion, garlic, and a pinch of salt in coconut oil until soft

  2. Stir in curry powder and cook for 1 minute to toast

  3. Add rice and coconut milk

  4. Stir and cover to allow rice to steam for 1 minute

  5. Break apart rice with a fork and stir until creamy

  6. Season with salt and pepper as desired

  7. Top with chopped green onion and red onion slices
