Easy Creamy Lentil Dahl
Ingredients
- • 1/2 medium onion, finely diced
- • 2 cloves garlic, finely grated/minced
- • 6-7 cherry tomatoes, diced
- • 1tsp curry powder
- • 1tsp turmeric powder
- • 1/2 tsp ground ginger
- • 1/2 tsp ground coriander
- • 1 tsp ground cumin
- • 1/2 tsp chilli powder
- • 400ml can Coconut milk
- • 1 can lentils, drained & rinsed
- • salt & pepper to taste
Preparation
Add onion, garlic & tomatoes to a saucepan with a little water, stirring frequently sauté for 5 mins until the onion is see-through
Next add all the spices, stir until fragrant
Pour in the coconut milk and lentils, then bring to the boil, once it starts to bubble, turn the heat down to low and let it cook and simmer for 25-30 mins until the sauce has thickened and reduced. Season with salt and pepper, serve with rice! Enjoy
