Easy Vegetable Spring Rolls

Ingredients

Fillings

  • Lettuce
  • Microgreens
  • Cucumber
  • Carrot
  • Purple cabbage
  • Mango
  • Anything else you like

Low-fat thai peanut sauce

  • 4 tbsp powdered peanut butter (pb2)
  • 2 tbsp water
  • 1 tbsp soy sauce
  • Juice of half a lime
  • Maple syrup or stevia to taste
  • Chili paste (optional)

Preparation

  1. Prepare the fillings by slicing the vegetables into thin strips.

  2. Soften spring roll wrappers in warm water according to package instructions.

  3. Assemble the spring rolls by placing a portion of each filling in the center of the wrapper and rolling tightly.

  4. Mix all the sauce ingredients together in a bowl until well combined.

  5. Serve the spring rolls with the peanut sauce for dipping.
