Falafel Salad with Creamy Cilantro Dressing
Ingredients
Falafel
- 4 cups cooked chickpeas
- 1 small red onion diced
- 2 tsp onion powder
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1/2 tsp cayenne pepper
- 1/2 tsp pink Himalayan sea salt
- handful fresh parsley
- 2 tbsp chickpea or spelt flour
- 1/2 cup grapeseed oil for frying
Salad
- romaine lettuce
- field lettuce
- red onion
- cucumber
- bell pepper
- plum tomato
- alfalfa sprouts
- avocado
- walnuts
- sundried tomatoes
- fresh parsley
Cilantro dressing
- 1 bunch fresh cilantro
- 1/2 cup yogurt
- juice of 1 lime
- salt to taste
Preparation
Combine all the ingredients in a food processor until well incorporated. The consistency should be sticky.
Scoop out the mixture and place it in a bowl.
Form the mixture into golf-sized balls.
Fry the falafel in grapeseed oil for 2-3 minutes on each side until browned.
Drain on a paper towel.
Dressing
Blend fresh cilantro, yogurt, lime juice, and salt until smooth.
Assembly
Chop the salad vegetables as desired.
Combine all salad ingredients in a bowl.
Add the fried falafel balls.
Drizzle with the cilantro dressing and serve.
