Falafel Salad with Creamy Cilantro Dressing

Ingredients

Falafel

  • 4 cups cooked chickpeas
  • 1 small red onion diced
  • 2 tsp onion powder
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1/2 tsp cayenne pepper
  • 1/2 tsp pink Himalayan sea salt
  • handful fresh parsley
  • 2 tbsp chickpea or spelt flour
  • 1/2 cup grapeseed oil for frying

Salad

  • romaine lettuce
  • field lettuce
  • red onion
  • cucumber
  • bell pepper
  • plum tomato
  • alfalfa sprouts
  • avocado
  • walnuts
  • sundried tomatoes
  • fresh parsley

Cilantro dressing

  • 1 bunch fresh cilantro
  • 1/2 cup yogurt
  • juice of 1 lime
  • salt to taste

Preparation

  1. Combine all the ingredients in a food processor until well incorporated. The consistency should be sticky.

  2. Scoop out the mixture and place it in a bowl.

  3. Form the mixture into golf-sized balls.

  4. Fry the falafel in grapeseed oil for 2-3 minutes on each side until browned.

  5. Drain on a paper towel.

Dressing

  1. Blend fresh cilantro, yogurt, lime juice, and salt until smooth.

Assembly

  1. Chop the salad vegetables as desired.

  2. Combine all salad ingredients in a bowl.

  3. Add the fried falafel balls.

  4. Drizzle with the cilantro dressing and serve.
