Fresh Summer Rolls with Peanut Sauce
Ingredients
- Rice paper
- Chopped vegetables (e.g., cucumber, carrots, bell peppers)
- Prawns (or other protein of choice)
- 2 tbsp peanut butter
- 1 tbsp soy sauce
- 1 tbsp lemon juice
- Water (for thinning the sauce)
Preparation
Soak the rice paper in warm water for a couple of minutes until it becomes soft and pliable.
Lay the softened rice paper on a clean surface.
Arrange a small amount of chopped vegetables and prawns horizontally on the lower part of the rice paper.
Carefully fold the sides of the rice paper over the filling.
Begin rolling the rice paper from the bottom, tucking in the filling as you go, to form a tight roll.
Repeat the process with the remaining rice paper and fillings.
For the peanut sauce, combine peanut butter, soy sauce, and lemon juice in a bowl.
Add water gradually to the sauce while stirring to achieve the desired thinness.
Serve the fresh summer rolls with the peanut sauce for dipping.
