Fruit-Filled White Bean Breakfast Bake
Ingredients
- 1 can of drained/rinsed white beans
- 2 tbsp maple syrup
- 2 pitted medjool dates
- 1/2 cup applesauce
- 2 tbsp ground flax
- Cinnamon (to taste)
- Heaping 1/2 cup oat flour (or 2/3 cup blended rolled oats)
- Fresh or frozen fruit of choice (e.g., raspberries, blueberries)
Preparation
Preheat the oven to 350°F (175°C).
In a food processor, combine drained and rinsed white beans, maple syrup, pitted medjool dates, applesauce, ground flax, and cinnamon. Process until smooth.
Stir in the heaping 1/2 cup of oat flour (or blended rolled oats) until well combined.
Gently fold in your choice of fresh or frozen fruit (e.g., raspberries, blueberries).
Line a loaf pan with parchment paper and pour the mixture into the pan, smoothing the top.
Bake in the preheated oven for approximately 30 minutes, or until the bake is set and the edges are lightly golden.
Allow the bake to cool before slicing to allow it to set further.
