Healthy Crepes with Chocolate Spread
Ingredients
- 100g or 1/3 cup rice flour (substitute with oat or plain flour)
- 1 tablespoon or 1/2 tablespoon maple syrup
- 2 medium eggs
- 130ml or 1/2 cup semi-skimmed milk
- 1 teaspoon vanilla extract
- 2 tablespoons or 1 1/2 tablespoons Greek yogurt
- 1/2 to 1 tablespoon butter for frying
- Pinch of salt
Chocolate spread
- 3-4 tablespoons Greek yogurt
- 2 heaped tablespoons cacao powder
- 3-4 generous tablespoons maple syrup
- 2-5 tablespoons water (adjust for preferred consistency)
- 1 teaspoon vanilla extract
- Pinch of cinnamon (optional)
Preparation
Add all crepe ingredients to a blender except the butter, along with a pinch of salt and blitz until smooth.
Leave the batter to rest in the fridge for 15 minutes.
Preheat a frying pan over medium heat and stir the batter again.
Once the pan is hot, add a little butter and tilt the pan to spread it.
Add about 2-3 tablespoons of batter to the pan and tilt again to spread the mix.
Fry for 2-3 minutes on each side until slightly golden and starting to turn crispy.
Repeat with the remaining batter to make 6 crepes.
Divide between two plates and serve with your favorite toppings.

Mix together all chocolate spread ingredients until smooth.
