Homemade Nando's Piri Piri Chicken Meal
Ingredients
Piri piri marinade
- 6–8 red bird’s eye chillies (or more for serious heat)
- 2 red peppers
- 5 garlic cloves
- 1 small red onion
- 1 brown onion
- Juice of 2 lemons
- 4 tablespoons vinegar (I used mango balsamic)
- 2 tablespoons smoked paprika
- 2 teaspoons cayenne pepper
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 2 teaspoons salt
- 1 teaspoon black pepper
- 4 tablespoons olive oil
Macho peas
- Cooked peas
- Mint
- Parsley
- Olive oil
- Butter
- Salt and pepper
Spicy rice
- Rice
- Stock
Preparation
Marinade and chicken
Cut your vegetables and char them for a few minutes
Add to a blender and blend, incorporating the spices and other marinade ingredients
Coat the chicken with the marinade and let it marinate for a few hours
To cook, use a pizza oven on the lowest setting, turning every few minutes and basting with more sauce for even cooking
Alternatively, cook in an oven at 200°C for 45 minutes, rotating a couple of times and adding more sauce throughout
The chicken is ready when the internal temperature reaches 78°C
Spicy rice
Cook a couple tablespoons of the marinade in a pan for a couple of minutes
Add rice and toast it
Add stock and cook until the rice is fluffy
Macho peas
Combine cooked peas with mint, parsley, olive oil, butter, salt, and pepper
