Vegan Mushroom Gyro with Tzatziki
Ingredients
Gyro mushrooms
- 250 g oyster mushrooms
- 2-3 tbsp olive oil
- 2 tsp dried oregano
- 1 tsp paprika
- 2 tsp smoked paprika
- 2 garlic cloves
- fresh rosemary
- 1 tsp brown sugar
- 1/2 tsp salt
- 1 tsp black pepper
Tzatziki sauce
- 2/3 cup (160 g) vegan yogurt
- 1/2 cucumber
- 1-2 garlic cloves
- small bunch parsley and dill
- 2 tbsp olive oil
- 2 tbsp vinegar
- salt
Additional components
- pita
- red onion (thinly sliced)
- tomato (thinly sliced and salted)
- fries (optional)
- fresh herbs (parsley and mint)
Preparation
In a bowl, mix the mushrooms with all the marinade ingredients and let it sit while preparing other components.
For the tzatziki, grate the cucumber, salt it, and squeeze out as much water as possible. Finely chop or grate the garlic and combine all tzatziki ingredients in a bowl.
Fry the mushrooms in a hot pan, using a pot as a weight to press while frying until slightly charred on both sides.
Thinly slice the onion and place it in cold water. Thinly slice the tomato and salt it.
Assemble everything on a freshly baked pita and enjoy.
