Italian Ground Chicken Chili
Ingredients
- 2 cans chili-ready diced tomatoes (14.5 oz each)
- 2 cans great northern beans
- 2 cans black beans
- 2 cans tomato sauce
- 1 air-fried sweet yellow onion
- 6 air-fried bell peppers
- 1 diced shallot
- 6-8 cups chicken broth
- 2 lbs extra lean ground chicken
- Italian seasoning, to taste
- Salt, to taste
- Pepper, to taste
- Red pepper flakes, to taste
Preparation
Brown the ground chicken the day prior in a skillet with avocado spray to break up cooking time.
Finely chop onions and bell peppers, then air fry at 400°F for 12-15 minutes or until crispy with a spray of avocado spray.
While the veggies are air frying, sauté 1 diced shallot in a big pot with a splash of avocado oil, a little white wine for flavor, and chicken broth until browned.
Once the shallots are translucent, add in all the canned goods and simmer until they boil.
Add in the pre-cooked ground chicken, air-fried veggies, and spices.
Cover and put on low simmer to let flavors combine for 2-3 hours.
