Italian Ground Chicken Chili

Ingredients

  • 2 cans chili-ready diced tomatoes (14.5 oz each)
  • 2 cans great northern beans
  • 2 cans black beans
  • 2 cans tomato sauce
  • 1 air-fried sweet yellow onion
  • 6 air-fried bell peppers
  • 1 diced shallot
  • 6-8 cups chicken broth
  • 2 lbs extra lean ground chicken
  • Italian seasoning, to taste
  • Salt, to taste
  • Pepper, to taste
  • Red pepper flakes, to taste

Preparation

  1. Brown the ground chicken the day prior in a skillet with avocado spray to break up cooking time.

  2. Finely chop onions and bell peppers, then air fry at 400°F for 12-15 minutes or until crispy with a spray of avocado spray.

  3. While the veggies are air frying, sauté 1 diced shallot in a big pot with a splash of avocado oil, a little white wine for flavor, and chicken broth until browned.

  4. Once the shallots are translucent, add in all the canned goods and simmer until they boil.

  5. Add in the pre-cooked ground chicken, air-fried veggies, and spices.

  6. Cover and put on low simmer to let flavors combine for 2-3 hours.
