King Oyster Mushrooms
Ingredients
- 200gm tenderstem broccoli spears
- 90gms baby pak choy
- 1 low salt stock cube
- 2 tbsp lost sauce
- 15gms fresh ginger - julienned
- 2 star anise
- 1 tblsp maple syrup (optional)
- 275gms fresh egg noodles
- 2 spring onion - finely sliced
- 1 red chilli finely sliced
Preparation
Wash and slice the mushrooms in half & score as seen. Blanch the broccoli & pak Choy in about 500mls of water for a couple of minutes drain & keep aside
Return the pan of water to the heat and add the stock cube, soy sauce, ginger, star anise. Bring to boil & simmer for 5 mins
Poach the fish (if using) in this broth and simmer until fully cooked and opaque. Or for the mushrooms pan fry in a little oil in a frying pan
Cook your noodles as per packet, I used fresh so just pan fried a couple of minutes
Divide the broth into 2 bowls, add the veggies/fish
Sprinkle over the salad onions & chilli to serve
