Braised Shiitake Mushrooms and Roasted Chestnuts

Ingredients

  • 200g roasted chestnuts⁣
  • 3 spring onions, white and green parts separated⁣
  • 1.5 tsp dark soy sauce⁣
  • 1 tbs shaoxing wine⁣
  • large pinch of white sugar⁣
  • 2 tbs oil⁣

Preparation

  1. Bruise the ginger and white spring onion segments by bashing them with the back of a knife. Cut green spring onion into 1 inch segments.⁣

  2. Heat a wok or pot, add oil then throw in bruised spring onions and ginger. Stir fry for a couple minutes until aromatic.⁣

  3. Add shiitake. Don't stir shiitake often, rather let sit and brown on the bottom of the pan, stirring only occasionally. It should take about 5 mins to brown. Deglaze with shaoxing wine.⁣

  4. Add stock, sugar, soy sauce. Cover and simmer for 10 mins. Turn off heat, add spring onion greens, mix well. Serve with rice
