Lentil Neatballs

Ingredients

  • 1 tbsp olive oil
  • pinch chilli flakes
  • 1/2 yellow onion diced
  • 3 small cloves garlic minced
  • heaping cup of cooked green lentils
  • 5 tbsp vegan parm
  • 1 flax egg
  • 2 tbsp coconut flour
  • 1 tbsp fresh rosemary rough chop
  • 2 tbsp fresh parsley rough chop
  • 1 tbsp dried oregano
  • 1 tbsp tomato paste
  • 2 tbsp gf panko
  • salt and cracked pepper

Preparation

  1. Sauté onion, garlic and chilli flakes

  2. In a food processor add flax egg and all neatball ingredients

  3. Pulse to combine

  4. Texture is good, careful not to over process

  5. Add 1 more tbsp of coconut flour if needed

  6. Form into balls

  7. Coat with vegan parm and sauté for several minutes to brown

  8. Bake in 375 oven for 15 minutes

  9. Add to fave sauce and pasta
