Healthy Pasta Loaded with Fresh Vegetables

Ingredients

  • 1 bunch asparagus
  • 2 garlic cloves
  • 1 bunch spinach
  • handful of fresh thyme
  • 1 lemon
  • sea salt and black pepper
  • Liviva Foods long noodles

Preparation

  1. Drain the package pasta.

  2. In a pan, sauté sliced garlic cloves with 2 tablespoons of olive oil.

  3. Add asparagus and cook for a few minutes.

  4. Add tomatoes and spinach.

  5. Season with salt and pepper, sprinkle fresh thyme, and squeeze lemon juice.

  6. Add the pasta.

  7. Cook for 5 minutes and serve.
