​Malai Kofta

Ingredients

  • for gravy:
  • onion: 1 chopped
  • tomatoes: 2 chopped
  • ginger: 1/2 t grated
  • roasted salted cashews: 3/4th cup
  • oat cream: 1 t (optional)
  • whole spices:
  • bay leaves: 2
  • green cardamom: 4-5
  • cloves: 4
  • peppercorns: 1 t
  • cumin: 1 t
  • powdered spices:
  • turmeric: 1 t
  • red chilli powder: 1 t
  • coriander powder: 1 t
  • water: 1 1/2 c
  • oil: 1 t
  • vegan butter: 1 t
  • salt to taste
  • for koftas:
  • sweet potato: 1 boiled and mashed
  • carrot: 1 grated
  • nutritional yeast: 2 t
  • red chilly powder: 1 t
  • garam masala: 2 t
  • salt: 2 t
  • corn flour: upto 2 t
  • roughly crushed roasted salted cashews: 1 t
  • oil to fry

Preparation

  1. Heat oil and butter in pan

  2. Add the listed whole spices and fry on low flame

  3. Add onions and ginger

  4. When onions begin to brown add tomatoes and the listed powdered spices

  5. When tomatoes soften add 1/2 c water and cashews

  6. Blend into a smooth paste with 1 c water

  7. Strain the gravy through a fine sieve and return to heat

  8. Bring to a gentle simmer

  9. For koftas

  10. Mix all the listed ingredients ( minus cashews)

  11. Roll into golf sided balls then flatten to form a disc between your palms

  12. Stuff with cashews in the centre, fold over and roll back into balls

  13. Dust with cornflour

  14. Deep fry till golden brown

  15. Add to gravy and drizzle with oat cream
