Mexican Rice

Ingredients

  • 1 tsp neutral flavored oil
  • 1.5 cups long grain rice
  • 2 tbsp tomato paste
  • 1 1/2 cups vegetable broth
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup diced carrots
  • 1/2 cup green peas
  • 1/2 cup corn kernels
  • 1 tsp cumin
  • 1 tsp chili powder

Preparation

  1. Heat oil in a pan with a fitting lid

  2. Sauté onion about 2 minutes

  3. Add the garlic and sauté for about 30 seconds

  4. Pour in the rice and stir/cook for about 3 minutes until toasted

  5. Stir in tomato sauce and vegetable broth, bring to a simmer

  6. Add carrots, peas, corn, tomato paste, cumin, chili powder, and salt/pepper

  7. Bring to a boil, then reduce heat and cover, allowing it to simmer for about 15 minutes or until the rice is cooked

  8. Stir in the freshly diced tomato, allow it to warm, then taste and adjust any seasonings to your preference
