Momma Grace’s Italian Ground Chicken Chili

Ingredients

  • chili ready diced tomatoes canned - 2 ⁣
  • 14.5 oz cans)⁣
  • great northern beans - 2 cans⁣
  • black beans - 2 cans⁣
  • tomato sauce - 2 cans⁣
  • 1 air fried sweet yellow onion⁣
  • 6 air fried bell peppers⁣
  • diced shallot⁣
  • 6-8 cups chicken broth (add more or less depending how thick you like it)⁣
  • 2 lbs of extra lean ground chicken (pine manor is our favorite from whole foods)⁣
  • italian seasoning, salt, pepper, red pepper flakes to taste⁣

Preparation

  1. Brown the ground chicken day prior to break up cooking time in a skillet with avocado spray

  2. Finely chop onions and bell peppers, air fry @ 400 for 12-15 or until crispy with a spray of avocado spray

  3. While the veggies are air frying, sauté 1 diced shallot in a big pot with a splash of avocado oil, a little white wine for flavor and chicken broth until browned

  4. Once those shallots were translucent, she added in all the canned goods and simmered until they boiled

  5. Add in pre cooked ground chicken (could use extra lean turkey and or beef too), air fried veggies, spices⁣

  6. Cover and put on low simmer to let flavors combine for 2-3 hours⁣

  7. Give your gut plenty of nutritional diversity and fibre to keep it happy and healthy - your gut is a powerhouse of immune protection

  8. Eat a broad diet rich in micronutrients and don’t let the thought of cancelled travel plans or not being able to go to your regular gym sesh let you slide back into “so what, may as well eat that tub of ice-cream” thinking!! ?
