One Pot Smoky Tomato White Bean Soup
Ingredients
- 1 onion, diced
- 6 garlic cloves, diced
- 1 thumbnail fresh ginger, diced
- 2 cup carrots, chopped
- 2 cups celery chopped
- 1/2 a medium sweet potato, diced
- 1 fresh corn on cob (optional but recommended)
- 2 cans of butter beans or any white bean
- 1 can diced tomatoes
- 2 Tbsp tomato paste or 3 Tbsp passata sauce
- 2 veg stock cubes + 5 cups water (or use 4 cups pre-made veg stock + 1 cup water)
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp pepper
- 1 tsp dried coriander leaves
- 1 fresh chilli, diced (optional)
- Big squeeze of lemon juice (to finish)
- Fresh parsley, chopped (to garnish)
- Sprinkle of salt to finish (optional)
Preparation
In a large pot, heat some oil on medium heat and sauté onions for 4 mins
Add garlic and ginger and continue to sauté for another 5 mins
Add carrot, celery and tomato paste continue to stir and add a bit of oil or water if needed
Add beans, diced sweet potato, diced tomatoes and all spices and stir
Add stock/water, place lid on pot and turn down heat to low simmer for 20 mins, stir halfway
Cut corn off the cob and add to pot, place lid for another 6 mins
Taste test and add more spice, salt, pepper if required. Serve with fresh parsley, a big squeeze of lemon, a drizzle of olive oil and crusty bread

Love how easy soup is, throw whatever veg you have in your fridge, add stock and spices, toss some beans in and voilà!
