Parmesan Crusted Smash Potatoes

Ingredients

  • 6 medium-large potatoes
  • 5 tablespoons butter
  • 1 tsp garlic and herb seasoning
  • Grated parmesan or cheese of your choice

Preparation

  1. Rinse the potatoes and prick them with a fork.

  2. In a microwave-safe dish, microwave the potatoes for 8 minutes on high.

  3. Once done, turn the potatoes over and microwave for a further 6-8 minutes.

  4. Once soft, transfer to a baking tray and smash the potatoes with the back of a mug.

  5. Brush with half the butter and season generously with garlic and herb seasoning.

  6. Air fry or oven grill at 200 degrees for 12 minutes.

  7. Remove from the grill, brush with the remaining butter, and sprinkle over the parmesan. Grill for a further 5 minutes until golden brown.

  8. Enjoy.

Tips

  1. Enjoy these as is, or serve with sour cream or top with tuna, cheese, or leftovers.
