Pumpkins and Lentils
Ingredients
- 2 cups red lentils rinse before use
- 1 tsp fresh garlic ?
- 2 green chilies sliced
- 1 medium chopped pumpkin from @worthyflavors
- 1 tsp turmeric spice
- 1 tsp cumin spice
- 1/2 cup chopped parsley
- 1/2 tsp himalayan salt
- 1/2 tsp pepper
- drizzle of @parmaveganparm
Preparation
Pour the lentils, chopped pumpkin and 4 cups of water in a saucepan on a medium heat, and cook for 15 minutes
Add the spices: ginger & garlic, turmeric and cumin spice, mix everything together
Use immersion blender for 30 seconds to blend the lentils and cook for another 10 minutes
Stir in the cilantro, salt and pepper
