Pumpkins and Lentils

Ingredients

  • 2 cups red lentils rinse before use
  • 1 tsp fresh garlic ?
  • 2 green chilies sliced
  • 1 medium chopped pumpkin from @worthyflavors
  • 1 tsp turmeric spice
  • 1 tsp cumin spice
  • 1/2 cup chopped parsley
  • 1/2 tsp himalayan salt
  • 1/2 tsp pepper
  • drizzle of @parmaveganparm

Preparation

  1. Pour the lentils, chopped pumpkin and 4 cups of water in a saucepan on a medium heat, and cook for 15 minutes

  2. Add the spices: ginger & garlic, turmeric and cumin spice, mix everything together

  3. Use immersion blender for 30 seconds to blend the lentils and cook for another 10 minutes

  4. Stir in the cilantro, salt and pepper
