Spiced Pumpkin and Lentil Dal
Ingredients
- 2 cups red lentils
- 1 teaspoon fresh garlic
- 2 green chilies sliced
- 1 medium chopped pumpkin
- 1 teaspoon turmeric spice
- 1 teaspoon cumin spice
- 1/2 cup chopped parsley
- 1/2 teaspoon Himalayan salt
- 1/2 teaspoon pepper

Preparation
Pour the lentils, chopped pumpkin and 4 cups of water in a saucepan on a medium heat, and cook for 15 minutes.
Add the spices: ginger and garlic, turmeric and cumin spice, mix everything together.
Use immersion blender for 30 seconds to blend the lentils and cook for another 10 minutes.
Stir in the cilantro, salt and pepper. Enjoy with naan or brown rice.
