Quick and Easy Puy Lentil Ragu

Ingredients

  • 1 tin chopped tomatoes
  • 3 tbsp tomato purée
  • 250g puy lentils (cooked)
  • 1/2 onion
  • 2 cloves garlic
  • 1 vegetable stock cube
  • 60ml red wine (optional)
  • 1 tbsp balsamic vinegar
  • 2 tsp dried mixed herbs
  • 1 tsp paprika
  • 6g fresh basil
  • Salt & pepper

Preparation

  1. Add a glug of olive oil to a saucepan over a medium heat and allow to warm.

  2. Finely dice the onion and add to the saucepan along with the crushed garlic clove. Allow to gently cook until brown.

  3. Add the red wine and allow to reduce before adding the chopped tomatoes, tomato purée and balsamic.

  4. Stir well and allow to heat through. Then add all the remaining ingredients, apart from the fresh basil.

  5. Cook over a medium heat for 10 minutes, stirring regularly.

  6. Stir in the fresh basil.

  7. Mix into cooked spaghetti or pasta and top with cheese for a wholesome and nourishing meal.
