Super Quick Tofu and Tomato Lunch
Ingredients
- 2 slices bread
- coconut oil
- minced garlic
- dried parsley
- tofu
- soy sauce
- paprika
- chopped tomatoes
- balsamic vinegar
- chopped spinach
- fresh basil
Preparation
Bread
Mix melted coconut oil, minced garlic and dried parsley in a bowl
Brush oil mix onto two slices of bread and grill
Tofu and tomatoes cooking
Cube tofu and add to a hot pan with some soy sauce and paprika
Toss for about 2 minutes constantly. Once all spices are evenly distributed, leave for about 5 minutes tossing every minute or so
Add chopped tomatoes and some balsamic vinegar. Cook for another 5-10 minutes until you’re happy with the flavours and colour
Assembly
Add chopped spinach to your garlic toast
Spoon on tofu mixture
Add fresh basil
Top with some balsamic vinegar
