Super Quick Tofu and Tomato Lunch

Ingredients

  • 2 slices bread
  • coconut oil
  • minced garlic
  • dried parsley
  • tofu
  • soy sauce
  • paprika
  • chopped tomatoes
  • balsamic vinegar
  • chopped spinach
  • fresh basil

Preparation

Bread

  1. Mix melted coconut oil, minced garlic and dried parsley in a bowl

  2. Brush oil mix onto two slices of bread and grill

Tofu and tomatoes cooking

  1. Cube tofu and add to a hot pan with some soy sauce and paprika

  2. Toss for about 2 minutes constantly. Once all spices are evenly distributed, leave for about 5 minutes tossing every minute or so

  3. Add chopped tomatoes and some balsamic vinegar. Cook for another 5-10 minutes until you’re happy with the flavours and colour

Assembly

  1. Add chopped spinach to your garlic toast

  2. Spoon on tofu mixture

  3. Add fresh basil

  4. Top with some balsamic vinegar
