Crunchy Tofu and Quinoa Veggie Lunch
Ingredients
- 1/2 tofu block
- 1 cup quinoa
- tomatoes/any veggie (optional)
Tofu marinade
- 1 tbsp coconut oil (any other oil is fine too)
- 1 tbsp soy sauce
- 1 tbsp cornstarch powder
Preparation
Cut the tofu into small dice and mix it with the marinade ingredients in a bowl.
Transfer the tofu to a baking tray and bake for 30 minutes at 180°C.
While the tofu is baking, cook the quinoa with a 1:3 ratio on medium heat.
To serve, fill a small bowl with cooked quinoa, flatten it with a spoon, cover with a plate, and flip it upside down to create a quinoa mound.
