Crunchy Tofu and Quinoa Veggie Lunch

Ingredients

  • 1/2 tofu block
  • 1 cup quinoa
  • tomatoes/any veggie (optional)

Tofu marinade

  • 1 tbsp coconut oil (any other oil is fine too)
  • 1 tbsp soy sauce
  • 1 tbsp cornstarch powder

Preparation

  1. Cut the tofu into small dice and mix it with the marinade ingredients in a bowl.

  2. Transfer the tofu to a baking tray and bake for 30 minutes at 180°C.

  3. While the tofu is baking, cook the quinoa with a 1:3 ratio on medium heat.

  4. To serve, fill a small bowl with cooked quinoa, flatten it with a spoon, cover with a plate, and flip it upside down to create a quinoa mound.
